Simple chickpea and kale salad

This is one my favourite, super simple salads. Wonderful in all seasons, it is filling without being heavy.

Makes: 4 portions

Preparation: 15 minutes

Cooking time: 5-10 minutes



Kale and chickpea salad
  • 200g curly kale (mix red and green as preferred)
  • 1 red onion
  • 240g Chickpeas
  • 2 garlic cloves
  • 1 lemon
  • Paprika
  • 4 tablespoons of olive oil
  • Two tablespoons of tahini paste
  • pinch of salt
  1. Wash and roughly chop kale, add to salad bowl
  2. Dice red onion, add to salad bowl
  3. Finely chop garlic and add to cup with tahini paste, olive oil and salt. Chop lemon in half, squeeze into cup then mix the dressing
  4. Add dressing to salad bowl and toss to ensure kale is coated with the dressing. Leave to stand
  5. Heat a little oil in a frying pan and add the chickpeas. Coat the chickpeas in paprika and fry until crispy, approx 5 minutes
  6. Add chickpeas to salad bowl, toss and serve
